ビル・エヴァンスとジム・ホールによる名盤『Undercurrent』から着想を得たこのカクテルは、ブランデーをベースに、薬草の香りとチョコレートのような甘みが折り重なった一杯です。繊細で力強いピアノ、そして危うさを帯びながらも洗練されたギターの音色を思わせる、複雑で奥行きのある味わいに仕上げました。
グラスの底に暗流するひとつまみの塩は、ビル・エヴァンスの人生を蝕んだアルコールとヘロインのように、少しずつ溶け出し、時間の経過とともに塩味が際立っていきます。

Inspired by the iconic album Undercurrent by Bill Evans and Jim Hall, this original cocktail by JJ combines brandy, herbal aromas and a subtle chocolate-like sweetness, evoking the powerful piano and the tension-filled guitar notes prominent in the album.
The pinch of salt resting quietly at the bottom of the glass gradually dissolves in a way that may mirror the slow unraveling brought on by alcohol and heroin in Evans’ life. As it melts, the cocktail takes on an increasingly noticeable saltiness.
